猪骨玉米萝卜汤
主料:猪大骨头1根甜玉米2根胡萝卜1根.
辅料:西红柿2个.
调料:食盐2小勺姜5克料酒1大勺白醋几滴水适量.
做法:
1.玉米去皮和须子后洗净切段.
2.胡萝卜削皮,洗净切块.
3.西红柿洗净去皮切块,老姜洗净切片.
4.大骨头先冷水洗两遍,而后冷水入锅加姜片和料酒去腥汆水.
5.将汆水后的大骨头捞出再用温水清洗干净,控水备用.
6.将大骨头和玉米及姜片一起放入锅内(冷水入锅),加热煮沸后改中火煮约5~8分钟.
7.放入胡萝卜块.
8.滴几滴白醋据说可以释放钙质,然后转小火煲90分钟左右.
9.在出锅前30分钟左右将切好的西红柿放入锅内,并加入2小勺盐调味.
10.继续小火煲30分钟,至西红柿变软,汤色变红即可关火.
烹饪技巧:
1、滴入白醋时量不要多了,要不影响汤的味道;
2、这个汤喝的就是食材的原味,所以除姜片和盐之外不用放其他任何调味料;
3、尽管提前焯水了,但煲汤的过程还是会将猪骨的一些油脂逼出来,怕油的话可以在关火后用勺子撇一下漂在上面的油脂,或者用吸油纸吸一下。
